Yalumba has been developing its own sustainable viticulture program since the mid 1990s. This starts in the vineyard and extends to every aspect of winemaking, production, packaging and distribution. Many awards and milestones have resulted due to sustainability now being at our core. All Yalumba wines were announced vegetarian and vegan friendly as of 2011. Yalumba is the first wine company in the world to receive the Climate Protection Award from the US Environmental Protection Agency, 2007. These benefits are most obvious in your wine glass.

Yalumba runs an impressive environmental management programme, setting aside hundreds of hectares of land for conservation management. For every hectare of vineyard we own, we have at least one hectare of natural vegetation. We’ve planted thousands of trees over the past few decades.

Yalumba is also a signatory of the Australian Packaging Covenant (APC) – an initiative aiming to increase sustainable packaging; increase recycling; and reduce packaging litter. Yalumba is committed to reducing the environmental effects of packaging, whilst maintain packaging integrity

“Apart from economic viability and social equity, for us, sustainability is about biodiversity in our vineyards,” says Winemaker Louisa Rose. “To encourage it, we’ve done a number of things: we’ve reduced the amount of chemicals we use, incorporated an integrated pest management system, and encouraged biodiversity of vegetation in our vineyards”. Y Series Shiraz Viognier -Luscious and exotic aromas of boysenberry, Turkish delight, vanilla bean and violets. The medium bodied palate is framed by flavours of sweet Turkish delight and violets, while soft tannins provide a perfect complement to the succulent finish, which shows the synergy between these two varieties.

The Shiraz grapes selected for this wine are those which display the most perfumed and aromatic profile that compliments the fragrance of Viognier. Everything is done to preserve this aroma: cool fermentation, the addition of Viognier (including as many whole berries as possible) and no oak ageing are just some of the processes that go into the making of this wine. These combine to produce a wine that is bright, aromatic and exotic

Enjoy with duck and pork terrine or a red lentil curry with sweet potato, spinach and chick peas.

WINEMAKER COMMENTS Summer was dry and warm leading up to Christmas, resulting in a vintage that was two weeks earlier than average. These conditions meant that the vines were able to ripen the grapes seamlessly, producing an abundance of flavour. Warm temperatures at the onset of fermentation, and also 3 – 5 days post fermentation has helped extract soft fleshy tannins and build solid wine structure.
TASTING NOTES Deep crimson purple in colour, this wine shows intense youthful aromas of dark, ripe cherries, Christmas pudding, Indian spice and dark chocolate. The palate is rich and ripe and embodies a classic South Australian Shiraz, with layers of ripe blackberries and Christmas cake, surrounded by soft, juicy, ripe tannins.
This wine drinks perfectly with whole roast suckling pig; or shallot pancakes with black vinegar dipping sauce.

Y Series Unwooded Chardonnay

A refreshing, lip smacking Chardonnay. Nature does the work for us and guides this wine’s evolution. With minimal winemaker intervention and no oak influence, this Chardonnay is pure and fresh, with subtle complexity from the 100% wild yeast fermentation.

Light straw with green hues the Yalumba Y Series Unwooded Chardonnay has fresh aromas of pineapple, quince and paw paw with floral spices. A rich, yet mineral palate complemented by fresh tropical fruit that finishes with fresh grapefruit acidity.

The Y Series Chardonnay grapes were picked across the flavour spectrum, from lively citrus flavours such as lemons and limes to peach and tropical fruits. We picked in this way to ensure that when blended, the wine was balanced with flavour and natural acidity. Pressed straight to fermentation, the juice was managed using a “hands off” approach. Wild yeasts initiated and completed fermentation and once finished the wine was left on
lees to build complexity.

Pale straw with green hues. The aromatics show paw paw and mango with blossom notes and sweet spice. The wine has a savoury edge with flinty notes from the wild ferment. The palate is fine and creamy with a touch of nuttiness, evolving with zingy citrus notes, fresh mango and cream. A refreshing, lip smacking acidity gives this wine lovely length and the finish is savoury and textural.
Try with pan fried haloumi with lemon and parsley, or chickpea, zucchini and carrot fritters with a green mango salad

Bright, medium to deep crimson in colour, opening with violets, sea spray and fresh Mediterranean herbs. There is a lovely hit of blueberry, a hint of black tea and the quintessential Australian note of dried eucalypt. When you first try the wine, there is an initial burst of fresh fruit sweetness, much like blackcurrant pastilles. This sweetness is balanced beautifully with savoury notes of fresh herbs and a lovely acid that compliments the blueberry Danish opulence. The wine is typically structural with focused, yet friendly tannins. This is a fresh and vibrant Cabernet Sauvignon. A lovely match with traditional or vegetarian homemade lasagne..

Yalumba Eden Valley Rousanne – A great white wine from Eden Valley

Since starting work with Viognier in the 1980s the Yalumba winemaking team has been keen to work with Roussanne, the other perfumed and exotic variety originating in the northern Rhône. Following the sucess of Viognier and other varieties of Rhône origin in the Barossa, this region was the natural place to plant. The result is this new wine varietal.

This wine is straw green in colour, showing aromas that are reminiscent of walking through wild flowers; camomile, lavender, wild rose and the suggestion of a nearby bee hive. The palate is silky yet defined; white fleshed peach, vanilla custard and cumquat layered over fresh grapefruit acidity and a fine almond meal texture with lingering hints of honey and fresh bees wax.
