Tyrrell’s Old Winery Shiraz 

Blended from fruit sourced from some of Australia’s best Shiraz regions in the country, our Old Winery Shiraz is deep red in colour, it’s smooth, soft and spicy, offering aromas of dark fruit and a subtle hint of vanilla from the oak influence. The palate has an abundance of rich Shiraz flavour, supported by firm tannins that provide length and complexity. An ideal accompaniment to traditional red-meat dishes, tomato-based pastas and matured cheeses.

Winemaker’s Notes
The grapes are sourced from trusted regional and local growers with the winemaking being completed at our
Hunter Valley winery in a combination of open top fermenters and stainless steel potter tanks. Maturation for
the wine took place in a mixture of French and American oak barrels.
Tasting Notes
Deep red in colour with a bright purple rim. A smooth, soft and spicy red wine with aromas of dark ripe fruit
and subtle vanillin oak. The palate is full of rich shiraz flavours and is supported by firm tannins which provide
good length and complexity.
Serving Suggestion
An ideal accompaniment to traditional red meat dishes, tomato based pastas and matured cheeses.

Tyrrell’s Old Winery Verdelho

Winemaker’s Notes
The Verdelho grapes for this wine were harvested from selected vineyards within the Hunter Valley, and the resulting free-run juice was cool-fermented to retain its inherent fragrant qualities. A small amount of residual sugar was left in the wine for added complexity and fruit weight. Soon after fermentation the finished wine was fined, filtered and bottled.
Tasting Notes
Fresh and lively with an intense sweet tropical nose with lifted spice aromas. Rich tropical fruit and honey flavours fulfil the palate and are complemented by a crisp lemony finish.
Serving Suggestion
Serve slightly chilled. An ideal accompaniment to chicken, seafood and spicy Asian, Mexican and Indian dishes.

Tyrrell’s Old Winery Pinot Noir

Blended from fruit sourced from some of Australia’s best red-growing regions in the country, this wine offers a classic Pinot Noir bouquet of bright, enticing cherry and strawberry aromas layered over an undertone of mushrooms and forest floor. The palate is long and concentrated, with rich, sweet fruit, subtle hints of savoury oak and smooth tannins. Made in a soft but generously flavoured style, it makes an ideal accompaniment to red meat and game dishes, pasta with tomato-based sauces and semi-soft cheeses.

Winemaker’s Notes
A blend of pinot noir fruit from some of the best red growing regions in the country. The majority of the fruit was machine harvested, after which the fruit was fermented in a combination of traditional hand plunged open
vats and larger potter tanks. Maturation was then carried out in predominantly French oak casks for 12 months prior to bottling.
Tasting Notes
Lots of varietal cherry and strawberry aromas with complexing forest floor undertones. A soft but generously flavoured style with sweet aromas of berries and mushroom. The palate is long and concentrated with rich
sweet fruit, subtle savoury oak support and smooth tannins.
Serving Suggestion
An ideal accompaniment to red meat, game dishes, tomato based pasta and semi-soft cheese

Tyrrell’s Old Winery Chardonnay

The Old Winery Chardonnay is a modern take on a traditional Chardonnay style. We picked the grapes a little earlier than usual to capture varietal freshness offering crisp, mouth-watering natural acidity, then matured it on yeast lees to add a little extra texture and complexity. It spent a relatively short time in French oak to maintain that wonderful freshness. The result is an easy-drinking, medium-bodied wine that offers aromas of stone fruit with a subtle hint of vanilla from the oak influence. The palate is generously flavoured with peach and citrus, rounded off with a clean, crisp finish. Serve slightly chilled to let the aromas and flavours sing. An ideal accompaniment to a wide variety of dishes, including seafood, vegetarian, chicken and pasta with a creamy sauce.

The Old Winery Chardonnay is a modern take on traditional Chardonnay style. Harvested slightly earlier to maintain natural acidity and freshness, the wine received minimal oak and was matured on yeast lees to gain
extra texture and complexity.
Tasting Notes
A medium bodied wine with aromas of stone fruit and subtle vanillin oak. The palate is generously flavoured with white peach citrus characters and a clean, crisp finish.
Serving Suggestion
Serve slightly chilled. An ideal accompaniment to a wide variety of cuisines such as seafood, vegetarian, chicken and creamy sauce pasta dishes.

A selection of some of our top blocks on the Estate and surrounding area, most of which are dry grown and averaging 40 years in vine age.
Vintage Conditions
The 2019 vintage was the third great vintage in a row for the Hunter Valley, the product of another hot, dry summer. The drought continued through the growing season, but on New Year’s Eve and 7 January, we had good storms that provided the vines with enough moisture to retain their leaves and fill out and ripen the fruit. While the berries were a little smaller than normal, the overall crop was at the level we expected.
Winemaker’s Notes
Our Hunter Valley Shiraz is made to the same high standards that our flagship Vat 9 Shiraz receives. The fruit was destemmed, but not crushed, to ensure as many whole berries as possible made it to the fermenter. The wine was then matured in older, large format French oak casks. These 2,700L casks highlight the fruit purity whilst making sure that oak isn’t the dominant character.
Tasting Notes
Vibrant purple colour, with a lifted nose showing bright red fruits and confectionary spice. The palate is medium bodied with good depth of flavour yet still lively and fresh. Soft, savoury tannins and a crunchy acidity adds to the wines complexity. A wonderful example of the modern, medium bodied Hunter Valley Shiraz.

Tyrrell’s Hunter Valley Chardonnay

The grapes for our Hunter Valley Chardonnay were sourced from a number of sites across the Pokolbin area, each of which has a slightly different microclimate and so brings its own unique personality to the blend.  A cool summer then gave us even, stress-free ripening with some heat around Australia Day that was perfectly timed at the final stages of ripening. With an early budburst and later than normal harvesting, the fruit had a longer than normal hang time, which meant that all of the fruit had wonderful flavours balanced by a high natural acidity. The grapes were both hand and machine picked before gentle pressing and fermentation. After cold settling for two days, the juice began fermentation in stainless steel tanks before being transferred and matured in new and older French oak barriques. After oak maturation, the wine spent an extended time on lees in stainless steel for an additional nine months to build texture and mouthfeel. A method used extensively in Burgundian winemaking.

Textbook modern, medium-bodied Hunter Valley Chardonnay to be enjoyed with a variety of cuisines. The nose shows a great mixture of citrus, white stone fruit, some oak spice as well as just a hint of solids complexity. The palate is medium bodied, with a lively fruit intensity and texture through the mid-palate, with a refreshing acid profile.
