Deen VAT 8 Shiraz
The Deen Vat range is a tribute to Deen De Bortoli, a true visionary in the Australian wine industry, whose mission was to create quality wine for everyone to enjoy. The wine has a deep maroon appearance with aromas of ripe blue fruits and dark chocolate . The concentrated yet supple palate shows more blue fruits, rich chocolate, hints of salt bush and elegantly structured tannins on the finish.
Fruit was selected from a number of different vineyards in the Heathcote region by the winemaker and harvested when the flavour and tannins were ripe and when the sugars are at their optimum.
2018 saw a cooler and a slightly wetter than average winter, vineyards experienced regular rainfall and warm temperatures throughout the spring which was then followed up with a warm and dry summer with generally lower yields and great fruit concentration.

Vineyards are carefully selected for a balance of fruit weight and ripeness. Harvest is carried out in the cool of the morning. Fruit is then carefully destemmed into Potters and fermented at 25-30°C over 7-8 days. Pressed, racked and matured in new and older hogs head barrels for 12 months. Approximately 30% was kept in tank to retain those lovely fruits to blend with the oak matured portions.

“De Bortoli Wines is a third generation family wine company established by Vittorio and Giuseppina De Bortoli in 1928. The couple emigrated to Australia from Northern Italy, from mountain villages at the foothills of the Italian Alps, near the historic town of Asolo.
Their son, the energetic and dynamic Deen De Bortoli, (b 1936 – d 2003) expanded and consolidated the business created by his parents. Deen’s children established De Bortoli’s reputation for premium wine including icon dessert wine Noble One and the Yarra Valley wines.”
The modern day development of viticulture in this region is believed to have commenced in the mid 1950s, when Paul Osicka planted his Major’s Creek vineyard. In the 1970s further vineyards were planted; Red Hill (now Red Edge), McIvor Creek, Mount Ida, Jasper Hill, Wild Duck Creek. This region is now the home to some big hitters in Australian Shiraz. The climate is regarded as temperate with cooling southerly winds. The major wine styles: Reds – Shiraz, typically full-bodied, ripe yet supple, with tastes including chocolate, berries, and traces of eucalypt.
flourish in a range of climates. In the warm to hot climates you can expect extremely intense aromatic, rich, full bodied wines, with hugh fruit (almost sweet) and chocolately tasting. In the more moderate/cooler climates you’re more likely to find structured Shiraz wines with black cherry, pepper and spice characters rather than the chocolate and fruit styles found in warmer climates.
