Mitolo Serpico Cabernet Sauvignon – Made solely from Cabernet Sauvignon, it is made from lightly dried grapes in an ‘Amarone’ style. This drying gives a richer, fuller style, and a superb wine of great individuality.
Brooding and alluring nose with notes of blackberry, plum and savoury herbal spices. Full bodied and mouthcoating, led by deep, dark fruit characteristics, with flavours of licorice, dark chocolate and fig. Multi layered and complex with a savoury finish framed by fine grained tannins.
Good with big, hearty meat dishes or, as we do, after a meal with sharp, hard cheese from the Veneto such as Asiago d’Allevo, walnuts and pear.
The Serpico Cabernet Sauvignon comes from the Lopresti vineyard, and more specifically the Chinese Block, which is located at the southern end of McLaren Vale, about 4km east of the coastal town of Port Willunga. The soil here is heavy grey loam mixed with black Biscay clay and sits above ancient Gnaltinga formation bedrock. Strong vine growth in spring is tempered by summers dry winds, developing pure, bright and savoury fruit flavours that are tempered by cooling afternoon sea breezes.

The first Mitolo wine, the 2000 G.A.M. Shiraz was named after Frank’s children Gemma, Alex and Marco. Since then Mitolo have added another 10 wines to the range each with its own distinct personality and story.
The winery works closely with its growers, the Loprestis. The Loprestis, also Italian immigrants and old friends of the Mitolos, have an affinity with their land, producing fruit of the highest quality. The fruit is the essence of Mitolo, with a depth of flavour garnered from heavy clay soils, yet freshness thanks to the gentle afternoon sea breeze. In the winery, Ben takes a ‘hands-off’ approach, fermenting cool to retain purity, and using a range of barrel coopers to generate complexity yet respect and enhance the fruit

Frank Mitolo’s partner is winemaker Ben Glaetzer, who was recently awarded the 2004 Qantas Medal for Young Australian Winemaker of the Year. Ben is obsessed with quality. ‘We pick all the grapes into small bins, pick on flavour rather than analysis and use about 80% French oak.’”
The McLaren Vale is predominately a red wine region, producing some of the best red wines in South Australia. Vineyards were first planted in the mid 1800s. One of the early pioneers Thomas Hardy established a business that evolved to BRL Hardy, one of the largest wine companies in the country. The region also has a healthy number of boutique wineries that consistently make fine wines and experiment with different wine styles. The climate is warm to hot with dry summers, and benefits from cooling breezes from the St Vincent Gulf. The main wine styles: Red – Shiraz (rich, ripe & generous), Cabernet Sauvignon; White – Chardonnay, Sauvignon Blanc.
