Floral, lemon/lime and lychee aromas are followed by intense apple, lime and orange blossom on the palate. The wine has great length of palate with the soft refreshing acidity balancing the intensity of fruit and providing the backbone to enable medium to long term cellaring if so desired

From a  single Springton vineyard picked on two separate dates to capture both natural acidity/freshness and intensity of flavour. The two parcels were then cold fermented in a stainless steel tank to preserve purtity of fruit then bottled with only a minimal addition of sulphur dioxide.

Working in the realm of minimal intervention, artisan, small-batch wines, the pair prioritise experimentation and quality. Dan and Theo share a love for the sometimes brutal, remote landscapes of Barossa and Eden Valleys, which also boast a rich tapestry of passionate communities.

BROTHERS-IN-LAW DANIEL CHAFFEY HARTWIG AND THEO ENGELA ARE THE LATEST GENERATION OF THE CHAFFEY FAMILY TO PLY THEIR VINOUS TRADE IN AUSTRALIA. THE ORIGINAL CHAFFEY BROTHERS (CANADIAN HYDRO ENGINEERS) WERE TRUE ICONOCLASTS. THEY ARRIVED IN AUSTRALIA IN 1886 AND PROCEEDED (ALONG WITH A NUMBER OF THEIR DECENDANTS) TO MAKE AN INDELIBLE MARK ON THE AUSTRALIAN WINE LANDSCAPE. OUR HANDMADE MINIMAL INTERVENTION WINES COME FROM INDIVIDUAL PARCELS OF LOW YIELDING VINEYARDS, SPREAD THROUGHOUT THE BAROSSA AND EDEN VALLEYS. DRAWING ON TRUE OLD VINES AND COMPLEX SOILS, WE SEE OURSELVES AS PART PARFUMIER – DISCOVERING DELICATE AROMATICS; PART HISTORIAN – PRESERVING THE PURITY OF PRISTINE FRUIT; AND PART MAD SCIENTIST – REVELLING IN THE LOST ART OF SMALL BATCH BLENDING.
