Manly Spirits Lilly Pilly Pink Gin
From the Manly Spirits Co. near Manly Beach in Australia comes a fruit-forward pink gin, inspired by the berries grown on lilly pilly trees (otherwise known as ‘syzygium smithii’ – think lilly pilly is a bit easier to pronounce). Along with lilly pilly, this expression features blood orange, lime, riberry, raspberry, sea fig, rosella, nasturtium, and a few more traditional gin botanicals. This one really stands out in a G&T, and can be garnished with berries or flower petals. Or both.
Manly Spirits Co. Distillery Gin range is distilled, bottled and labelled by hand before being sent out into the world from our artisan distillery on the Northern Beaches of Sydney.
Striving for only the highest possible quality, but also driven to deliver expressions that capture the diversity of Australian botanicals, our team explores above and below the ocean surface to find that something special.
Our distillery has two gorgeous Holsten stills dedicated to the production of our white spirits range. During production our stills, Bella and Jordan, are meticulously monitored by our Distillers for key timings. We choose not to use automatic cuts but rely on the well-tuned noses of our craftsman to ensure we extract as much flavour as possible from our botanicals while maintaining the balance of a pure, clean spirit.
Inspired by coastal living and sunrise swims through the crystal-clear waters of Manly’s famed marine sanctuary, our exquisite Gins are crafted using a carefully-considered blend of sustainably foraged marine botanicals, Australian native and more traditional gin botanicals, balanced neatly with the highest quality Australian grain spirit.

Research
Driving through the hills of Tasmania in late 2015, David and Vanessa first discussed the possibility of one day owning their own distillery. Following intensive research exploring distilleries in the USA, Europe, UK and Scotland the pair committed to their plan and sought hands-on training from a leading distillery in Tasmania.
Fast forward 18 months, and dreams do come true with Manly Spirits Co. Distillery launching April 2017.
Creation
Our range of Australian premium spirits are created using artisanal methods in our distillery based in Sydney’s Northern Beaches. We may make it look easy but spirit creation is a complex undertaking that requires an in-depth understanding of the intricate distilling processes, native and traditional gin botanicals, chemistry, equipment and timing that our team pulls together to create the products you enjoy.
Innovation
As innovative Aussies, the Manly Spirits Co. team strive to keep things interesting and are always experimenting with new flavours, equipment and techniques to ensure we craft a distinctly Australian premium spirit.
Our collaboration with renowned forager and chef, Elijah Holland, to sustainably source local marine botanicals for distillation in our white spirits is one example of this.
Australia’s first vines were planted in New South Wales on the Farm Cove foreshore. The first commercial wine was made there, and the first wine exported to England – by Gregory Blaxland in 1823. Given the size and climate diversity of NSW and its large population, it is surprising that the state does not play a bigger role in Australian wine. It is a state of great contrasts, from the huge, flat expanse of irrigated vineyards in the Riverina area near Griffith to the high uplands of Mudgee in the north. The Hunter Valley is the most recognised region within NSW, famous for its long-lived Semillons and unique styled Shiraz. Riverina is the largest wine-producing region. The more recent viticultural developments are within the regions along the Great Dividing Range: Mudgee, Orange, Cowra, Hilltops etc. There is much promise and interest in the wines now being produced within these regions.
