NV BRUT Winemaking The grapes were picked during the cool of the night, the fruit was de-stemmed and pumped into the press. Only the best quality of free run juice was taken off; then clarified before adding yeast. The fermentation was carried out at a cool temperature to maintain the fruit flavours. After fermentation the base wine was allowed to rest on yeast lees for 6 months before undergoing a second fermentation to produce the fine bubbles. The Wine Light green straw in colour with a fine persistant bead showing lifted aromas of citrus and apple. Tasting soft and refreshing with light creaminess and balance.

Trentham Estate is proud to announce its continued commitment to water conservation and wetland restoration, through a new partnership with the Murray Darling Wetlands Working Group Ltd.

Trentham Estate has long strived to provide support to localised Murray Darling research activities for sustainable water supply, quality and capacity. With the recent closure of the Lower Basin Laboratory in Mildura, it has looked to another respected organisation to support during a time of much strain on the local environment. For over 20 years, the Murray Darling Wetlands Working Group Ltd has worked on wetlands throughout the Murray-Darling Basin, restoring and improving the management of wetlands throughout the catchment, of the Murray-Darling Basin.

Trentham Estate’s River Retreat label, now vegan friendly, will proudly continue Trentham’s dedication to corporate responsibility – whereby every bottle purchased of River Retreat wine will result in a donation towards the Murray Darling Wetlands Working Group.

With many great projects currently underway in the far-west region of NSW, the Murray Darling Wetlands Working Group will benefit greatly from these ongoing funds.

TERROIR/PROVENANCE/REGION

Jansz Premium Cuvée Rosé – Fruit is sourced from selected cool climate vineyards across Tasmania, ranging from the Pipers River and Tamar Valley regions in the
north to the Coal River Valley in the south. Specially selected and crafted individual batches form the basis of this Rosé.

TASTING NOTES

A vibrant sparkling Rosé showing aromas and flavours of strawberries, rose petals and fresh brioche, rich and creamy on the palate from the
influence of both the grapes and tirage age. A vibrant yet delicate pink hue with a fine persistent bead. Turkish Delight and rose petal
floral aromas combine with a textured mousse creaminess and strawberries on the palate to leave an elegant vibrancy and freshness. A wine
full of “joie de vivre” that brings the delights of summer into the glass at any time. Once released this wine is ready to enjoy.

FOOD PAIRING

Pair with smoked salmon blini and crème fraîche or poached quince tart.

WINEMAKING

Hand-picking, gentle whole bunch pressing, cool fermentation, 100% malolactic fermentation, complex assemblage and extended ageing on lees after bottle
fermentation, all combine to produce a stylish and complex wine. To maximise blending options and complexity in the final wine, batches are kept separate during winemaking.
Released with a minimum three months of bottle age.

Jansz Premium NV Cuvée

Jansz Premium NV Cuvée is made in Tasmania which is renowned as Australia’s home of great sparkling wines. The fruit used in this Jansz Premium NV Cuvée is grown on selected, cool climate vineyards across Tasmania.
To maximize blending options and complexity in the final wine, batches are kept separate during winemaking. Secondary fermentation takes place in the bottle and is aged on yeast lees for as long as possible. The perfect balance for our Premium Cuvée is reached at just over two years.
Honeysuckle and citrus scents are immediately apparent with slight aromas of nougat, roasted nuts and a hint of strawberry from the Pinot Noir. A well-balanced palate of delicate fruits and creaminess fills the mouth with a lingering finish of citrus and nougat.

The Jansz Premium NV Cuvée is based upon Jansz wines of several vintages with specially selected and crafted individual batches from the cooler locations in South Australia, Tasmania and Victoria, with the largest regional parcels being Tasmanian. The matching of the crisp and fine flavours has resulted in a structured wine of medium body with zesty fruit characters.

Tasting  Note

Aromas of honeysuckle, citrus zest and fresh strawberries from the Chardonnay and Pinot Noir fruit. Extended time on lees during secondary fermentation contributes to more complex aromas of nougat and roasted nuts. The palate is balanced with delicate fruit flavour, fine creamy texture and refreshing natural acidity.
 

Best Enjoyed With

A perfect match with natural oysters drizzled with any of our cuvées (instead of lemon) or fritto misto with lemon aioli.
 

Treatment

Willowglen Sparkling Brut – To the eye a pale straw hue with an unrelenting fine bead. A bouquet of fresh lemon pith with complexing brioche & barley sugar. The palate is treated to a voluminous mousse of citrus and
freshly iced pastries that goes on and on to a delicately fresh fine acid finish.

Particular premium vineyards were chosen for their well-shaded canopy, slow ripening and acid retention. A blend of superb vintages.

The Chardonnay and Pinot Noir are picked in the cool of the night to retain acid. Ferments are warm to add interest and mouth feel. Harmony in the wine comes from the blending of the two varieties over numerous vintages. A secondary ferment is then undertaken in tank to add weight and a lovely creamy texture to the wine.

Drink by its self as an aperitif or with canapes, seafood or salads.

A sparkling blend that is rich and generous with great length and “zing” of flavour anad loaded with character. Serve chilled this sparkling wine from one of Australia’s most famous districts.

Clare Valley is one of Australia`s oldest wine regions and is probably best known for its Riesling wines. Polish Hill River is a sub-region one and a half hours drive north from Adelaide. Named after the Polish settlers of the mid 1800s, the climate is ideal for premium grape growing with a combination of consistently good winter rains, hot summers tempered by cool nights and a long ripening period.
 
The name Polish River comes from the Polish settlers who came to the area in the early 1850s escaping religious persecution. Pauletts reputation for producing wines of finesse, elegance and intensity is justly deserved with consistent skill and care from vintage to vintage. Neil Paulett graduated from the Roseworthy oenology course in the early 1970s and spent a further ten years honing his winemaking skills at Penfolds before buying his own property in the Clare Valley. Located some 90 minutes north of Adelaide,this lovely property now extends to 150 hectares with 47 planted with vines. Since the first vintage in 1983 there have been many accolades both at home and internationally. These wines are a true reflection of the region and are of outstanding quality.
Tasting Notes
This unusual sparkling Clare Valley Riesling has a bright lemon colour with citrus and yeasty, biscuitty aromas with a persistant and fine mousse. The palate offers rich and lively mouthfilling flavours of typical zesty lime, pineapple, floral and honey flavours, perfectly balanced with a dry, refreshing natural acidity.
 
Food – An excellent aperitif and wine for enjoying al fresco, but will also prove a great accompaniment to rich seafood like lobster or scallops, artichokes or truffle infused risottos.

Are You Game Sparkling Vermentino by Fowles Wine

Are You Game Sparkling Vermentino – Vermentino is an aromatic grape variety native to Sardinia. With its late ripening, the variety is well suited to warmer climates and is thriving in the Riverland in Australia. They chose to plant the variety at their Upton Run vineyards to hedge against the threat of climate change, as it is used to the warmer ripening conditions. As the Strathbogie Ranges still remain cool, they are seeing when picked early, the lean green style of this fruit is ideally suited to creating a crisp sparkling wine base.
They started experimenting with Vermentino in our Are You Game Sparkling a few years ago. The blend has been the wonderfully poetic Chardonnay/Pinot/Vermentino. They noticed more and more how the fresh lively acidity, pear, apple and citrus fruit characters, helped create the perfect refreshing prosecco style sparkling wine. It was a natural progression to move to a Vermentino dominant blend.
The new Are You Game Sparkling Vermentino is pale green in colour with delicate and clean aromas of citrus blossom and pink lady apples. The wine is light and fresh on the palate with apple and mineral characters bursting through, followed by a balanced acidity and good length.

Are You Game Sparkling Vermentino – Served perfectly with fresh yabby, brushed with garlic and parsley butter, seared on the barbeque on damper – a truly Aussie take on the famous San Francisco lobster roll.
