Four Pillars Spiced Negroni

Four Pillars Spiced Negroni Gin was the first ever gin created to go into a Negroni cocktail, the exotic spices in Spiced Negroni Gin give it a punch to stand up to the strong flavours in a Negroni. Olive Leaf Gin is a savoury gin. Three types of cold-pressed extra virgin olive oil and olive leaf tea from the world-class groves of Victoria’s Cobram Estate. Botanicals like rosemary and bay leaf transport you to the Mediterranean.

Spiced Negroni Gin has been highly awarded all around the world.

The most widely held story is that the Negroni cocktail was invented at Caffe Casoni in Florence, Italy in 1919. 

Legend tells that Count Camillo Negroni asked his friend, bartender Forsco Scarselli, to strengthen his favourite cocktail (the Americano) by replacing the soda water with gin. Scarselli added an orange garnish, rather than the lemon you’d usually get with an Americano, and the drink took off. 

Before long, everyone was coming into Caffe Casoni for a ‘Negroni’, and the classic cocktail was born.

Four Pillars Gin is a modern Australian Gin. The team wanted to create gin that represented contemporary Australian, classic, approachable, spiced to perfection and lifted with great citrus. Each flavour is distilled  together in a German made copper pot still called Wilma.

Four Pillars Spiced Negroni

Four Pillars Bloody Shiraz Gin

We’d be crazy not to use the incredible calibre of cool climate fruit available to us in the Yarra Valley. So we steeped Yarra Valley Shiraz grapes in high proof Rare Dry Gin for eight weeks.

The fruit was de-stemmed but kept mainly as whole berries, and the tanks were kept cold and stirred daily. 

After eight weeks we pressed the fruit before blending with more Rare Dry Gin. 

The resultant gin is an incredibly rich, deep purple colour, which turns iridescent pink when mixed with tonic or soda. 

Aromatically is has fresh pine needles, citrus and spice, and a clear peppery, dense raspberry character. The palate is lovely and sweet with a long juniper and spice character on the finish.

Unlike Sloe Gin (which is less than 30% ABV), the alcohol is 37.8% so it packs a punch and is ideal in a range of cocktails, like Sam’s ‘Bloody Floradora’. We also love it straight on the rocks in all its pure purple glory, just with a slice of orange. Or in a fabulously colourful G&T!

Four Pillars Bloody Shiraz Gin is best consumed within two years of vintage. The gin is unfiltered and may start to develop drier fruit characters beyond two years.

Flavour-wise it’s showing dark fruit, red berry and spice. There is also plenty of that classic Yarra Shiraz white pepper. And of course a lovely ginny character carries those grape aromas, making it unmistakably gin. The palate is lovely and sweet, with long juniper and spice characters to finish.
The ABV is 37.8%, unlike Sloe Gin where the alcohol less than 30%. So it packs a punch and is ideal in a range of cocktails. The gin is unfiltered, so it will develop secondary fruit characters beyond two years, and is best consumed within two years of vintage.

Four Pillars Modern Australian Gin

This gin was originally an exclusive collaboration between Four Pillars Gin, QANTAS and the Rockpool Group.

Alongside some great native botanicals, Asian spices like Szechuan peppercorns gave it a lovely warm mouthfeel (a tiny bit like Neil Perry’s famous numbing duck dish from Spice Temple). Combined with local fruits and Australian macadamia nuts this gave us a gin with lots of softness and spice.

And then something not entirely unexpected happened. Everyone wanted in on this ‘secret’ gin they had seen in fancy restaurants and airport lounges.

We think of it as a modern Australian classic, strongly led on the nose and palate by lashings of juniper.

This traditional underpinning is supported by native lemon myrtle, quandong, macadamia nuts, fresh grapefruit peel, red and green Szechuan (because what would modern Australia be without Chinese flavours?) and fresh red apples.

The result is a bright and dry gin, made in a truly Australian way, and now available for everyone to share.
