Region

The spectacular Clare Valley in South Australia is known as one of the best wine-growing regions on the globe. One of Australia`s oldest wine regions and is probably best known for its Riesling wines. Polish Hill River is a sub-region one and a half hours drive north from Adelaide, with slate soils for a flintier style Riesling. The region is made up of smaller boutique wineries, so you are bound to find amazing gems by those producing on a smaller scale.

Pauletts have been making award-winning wines for nearly 40 years. Starting in a little tin shed nestled in the valley of the Polish Hill River region, this family winery has grown into an internationally acclaimed and award-winning winery. Pauletts have a reputation for producing wines of finesse, elegance and intensity that truly reflect the region due to their dedication and care from vintage to vintage. This lovely property now extends to 150 hectares with 47 planted with vines.
Tasting Notes
Always a great talking point, this extraordinary speciality sparkling red wine is based on a cool climate Cabernet Shiraz blend from vines situated on the Trillians Hills in Clare Valley. It is a deep ruby colour with a lively mousse which holds the delicious notes of rich plum and dark berries alongside savoury and spice notes. Powerful dark fruit is well balanced by subtle oak and a soft texture of velvety tannins which is well balanced by oak, with a long and elegant finish.
Food
A good companion to white meats including turkey, veal and duck, pates, barbecued meats and plum pudding.

Miss Molly Sparkling Shiraz

 

Miss Molly Sparkling Shiraz is the Boxer Shiraz’s girlfriend, bubbly and full of fun.

Vivacious and full of class, Miss Molly is brimming with vivid maraschino cherry and plum jam that progress into layers of milk chocolate and mocha. Toffee and cinnamon notes intermix throughout the flavour spectrum as the bubbles add an undeniable vibrancy to the mouth feel. This wine is a lively celebration of McLaren Vale Shiraz, fitting for any occasion.

The grapes were grown on the Longbottom vineyard in Padthaway, the Birchmore vineyard in Langhorne Creek and the Hunt Creek, Semmens and Mollydooker vineyards in McLaren Vale. Barrel fermented and matured in 100% American oak using 32% new and 68% one year old barrels. The Boxer has gone through a secondary fermentation allowing us to create this beautiful sparkling wine.

Heavy rain in the McLaren Vale and Langhorne Creek regions during July, an incredible 31% increase in rainfall. These cold, wet conditions continued through to early summer, becoming the defining features of the 2017 vintage. Budburst and flowering were both delayed, resulting in a later harvest than normal. In the lead up to harvest there were concerns of mildew and botrytis affecting the grape quality, however Mollydooker’s open canopies allowed air flow and, with perfect summer temperatures, grapes were not affected.

Barrel fermented and matured in 100% American oak of which 37% new; 59% one year old; 4% two year old.

The vineyards are situated on the magical Seaview Ridge, which with its ancient soils and Mediterranean climate, is home to some of the most iconic Australian wines. There are three separate vineyards – Long Gully Road, Coppermine Road and the Home Blocks, giving us a total of 114 acres of Shiraz, Cabernet and Merlot. All of the grapes are grown sustainably.

This wine is another classic from the Mollydooker stable as well as being a fun wine for happy occasions.

Majella Sparkling Shiraz

Majella Sparkling Shiraz –  Sparkling red wines are a great Australian tradition, and Majella has kept this alive with their popular Sparkling Shiraz. A vibrant dark red with a fine bead, it boasts plum, raspberry, and blackberry aromas, a rich, smooth palate, gentle tannins, and a generous finish. Perfect for any occasion!

The grapes come from Coonawarra which lies only 60 miles inland, exposed to a maritime climate, with dry and moderately cool summers. Persistent cloud cover generally moderates the ripening period temperatures. The ‘Terra Rossa’ of Coonawarra is Australia’s most famous soil, renowned for its affinity with Cabernet Sauvignon wines. 

The base wine of their Sparkling Shiraz is matured in 2nd and 3rd use French oak hogsheads for five months before undergoing secondary fermentation in the bottle. The wine remains on lees for 14 months and, using méthode traditionnelle, the bottles are hand-riddled, then disgorged. A small amount of vintage port is added for extra complexity.

It’s a great wine for any occasion, and goes well with most food styles particularly game, spicy foods and cured meats. The Aussies call this a breakfast wine. Enjoy now or cellar for up to 10 years to develop further complexity.
