Our Reserve Shiraz is dry and full bodied, rich with aromas of spicy white pepper cherry , followed up with ripe, juicy red and black berry fruits on the palate.
Vinification
The parcels of fruit were fermented in stainless steel vertical fermenters for 4-6 days between 26-28ºC. The wine was then pressed at 1 Baume and
left to ferment until dry, then racked onto French oak for its malolactic fermentation. Once secondary fermentation was complete the wines were
then clarified via centrifuge into a combination of premium French staves in stainless steel tanks and oak barrels for ageing. The wines were carefully
monitored and when it was decided that the oak level was at its optimum, blending trials commenced.
Recommendation
A perfect match with red meat dishes or a Sunday roast.
Simon Hackett Reserve Shiraz is made by McLaren Vale legend Simon Hackett. Simon Hackett was born and raised in the Barossa Valley where his family have been connected with the wine trade for many generations. – four generations of the Hackett family followed agricultural pursuits in South Australia. Simon worked at Saltram’s, in the Barossa, before moving to McLaren Vale in 1973 where he cut his teeth working at Southern Vales Cooperative Winery (now Tatachilla) eventually becoming senior wine maker. Simon’s privately owned winery is situated at the entrance to McLaren Vale in Budgen road and it is here where he hand crafts his wines in small open top fermenters and gentle nurtures them in a combination of French and Oak barriques. Much of his fruit is sourced from dry grown vineyards with ancient, gnarled vines. Yields are very small and his entire annual production rarely exceeds 10,000 cases. Today Hackett sources grapes from the McLaren Vale, Barossa Valley and Adelaide Hills regions of South Australia.
Simon Hackett Hills View Shiraz is 100% Shiraz , a portion of the wine was barrel fermented in 2nd year American oak hogsheads. Once fermented dry, the total wine was matured in 2nd year American hogsheads for 10 months.
The winery is perfectly situated on the hill as you enter the McLaren Vale region; the cellar door is light, bright, with a long arched verandah looking over the vines.
In 1984, Simon Hackett decided to concentrate fully on establishing his own boutique label and today crushes grapes grown in the McLaren Vale and Barossa Valley regions of South Australia, producing a range of rich, bold, innovative wines.

Simon Hackett was born and raised in the Barossa Valley where his family have been connected with the wine trade for many generations. His great uncle attended Roseworthy Agricultural College in 1860 and later his father graduated from the inaugural Oenology course from the same college in 1938. Today Simon’s winery is situated at the entrance to the McLaren Vale in Budgen Road and it is here that he hand crafts his wines in small open top fermenters, gently nurturing them in a combination of French and American oak barriques. Simon has never been afraid to tackle less common varietals and much of his fruit is sourced from dry grown vineyards with ancient gnarled old vines. His refreshingly citrus Semillon is a real eye opener whilst his Old Vine Grenache is one of the most delicious we’ve ever tasted, although obviously we are biased! Yields are often very small and his entire annual production rarely exceeds ten thousand cases.
The McLaren Vale is predominately a red wine region, producing some of the best red wines in South Australia. Vineyards were first planted in the mid 1800s. One of the early pioneers Thomas Hardy established a business that evolved to BRL Hardy, one of the largest wine companies in the country. The region also has a healthy number of boutique wineries that consistently make fine wines and experiment with different wine styles. The climate is warm to hot with dry summers, and benefits from cooling breezes from the St Vincent Gulf. The main wine styles: Red – Shiraz (rich, ripe & generous), Cabernet Sauvignon; White – Chardonnay, Sauvignon Blanc.
